Vegan Diet in the tropics in Costa Rica
Many people are now convinced of the health benefits an animal
protein free diet can be. Milk protein and lactose intolerances
are occurring more frequently and often political or ethical reasons
play a role in a person's turning to veganism.
"How can vegan food be varied and tasty?" Is a frequently asked
question. When someone first becomes a vegan, a lot more time is
needed to prepare meals this changeover. Just buying the food takes
longer because you have to think about a range of new products.
However, the variety of foods is large; very large in fact!
Veganism doesn't mean that meals have to consist mainly of soja
or tofu products. Many other plants have enough proteins to cover
our protein needs and therefore the anxiety many people have about
their protein needs is ungrounded.
The food in Cascada Verde.
We at Cascada Verde are not out to convert you but we do offer our
guests the opportunity to gain insight into how delicious the vegan
cuisine can really be. Our breakfast consists of a large dish of
fruit, muesli milkshakes with banana and oats, fruit juice and tea
or coffee (cow's milk is also available).
Neither should vegan baking be underestimated. Ginger-carrot-almond-muffins
or chocolate cake are just a few baked foods we offer. We also take
great care to vary the evening meals; a large mixed salad is standard,
with vinegar and oil dressing made with a Tahini or avocado base.

ginger, and guacamole with baked banana in a marinade of cinnamon,
lemon and coconut?
